Cinnamon Spiced Quinoa Porridge Healthy Recipe This cinnamon spiced quinoa porridge is warming and delicious topped with blueberries, goji berries, chia seeds and nut milk. One of my favourite things to do in the colder months is to start my day by cooking a nice warming breakfast.  This spiced quinoa porridge is made with cinnamon which has a naturally warming effect on the body.   Not only will the heat of the stove warm you as you prepare your breakfast, the cinnamon gently raises your body temperature, making it the perfect remedy for a chilly morning! Not only does Cinnamon warm you up, this little spice has some potentially big health benefits.  This medicinal bark has long been used in Chinese medicine and Ayurveda for the treatment of colds, interjection, stomach aches and cramps.  It has been used to improve energy, vitality and circulation as well as cognitive function and memory.  It is also known to curb blood sugar by lowering insulin resistance.   Starting your day with a little cinnamon may lower sugar cravings throughout the day, as it minimises insulin spikes after meals.  As cinnamon is naturally sweet and high in flavour, it’s a great substitute for sweeteners like sugar or syrup! You can try it with this Spiced Quinoa Porridge healthy breakfast recipe! SPICED QUINOA PORRIDGE Ingredients: (Serves 1) 1/2 cup of quinoa 1/2 cup of nut milk (almond or coconut) 1 pinch cinnamon 1 tablespoon chia seeds 1/2 cup of blueberries (fresh or frozen) 1 small handful of goji berries & pumpkin seeds Method: 1. In a small stovetop pot, cook quinoa as per packed instructions. 2. Once cooked, add cinnamon and nut milk & simmer on a low heat. 3. Add blueberries and chia seeds and stir through for 5 minutes. 4. Transfer to a bowl, top with goji berries, pumpkin seeds & extra chia seeds (edible flowers optional!)
