RAINBOW RICE PAPER ROLLS with green pea & tahini dipping sauce You can fill these rainbow rice paper rolls with anything you like! We suggest fresh seasonal produce – fruits and veggies in season will have a higher nutritional content. We spent the morning at the local farmers market and sourced the following ingredients which we used to make our rainbow rice paper rolls! Recipe below! Ingredients: makes approx. 8 rolls (Serves 2) 1 small bunch of coriander 1 ripe avocado 1 bunch of rainbow carrots cut into thin strips using a peeler 1 bunch of purple raddishes sliced 1/4 head of cabbage shredded 4-5 strawberries 1/2 cup of micro greens or sprouts 1/4 head of iceberg or other crunchy lettuce, shredded 1 packet of tofu or tempe 2 tbsp sesame oil 2 tbsp tamari sauce Sauce: 1 cup of frozen peas 2 tbsp tahini juice of 1 lemon splash of apple cider vinegar 1 handful of fresh coriander (cilantro) salt & pepper to taste Method: 1. Blend all sauce ingredients until smooth, set aside 2. Prepare all vegetables by thinly slicing longways, shred cabbage and lettuce 3. Slice tempe or tofu into 1cm thick strips, using a frying pan, heat sesame oil, add temple or tofu, begin to fry, flipping regularly until golden, add tamari, combine well and remove from heat. 3. Fill a shallow dish with warm water, one at a time dip rice paper sheets in the water for 5 seconds, remove immediately and lay on a chopping board or large plate. 4. Arrange filling on the wraps (as pictures above), lay the ingredients, you can mix it up here so that each taste different, some with or without tofu / tempe, some with crunchy reddish & some with sweet strawberry. 5. Once filled, fold the top and bottom in, the sides should stick down, starting at one side roll the paper over the filling and continue to roll to complete the wrapped process. Repeat. (if this is your first time wrapping, don’t worry so much if it doesn’t look great the first time around, practice & they will keep getting better once you get the hang of it!) 6. Dip in the green tahini sauce and eat! Enjoy immediately!
